Had my favorite normal lager in town, a modified ESB, the SMaSH beer in the pic (F ing good) and 5 oz of a really cool Saison. Y'all were making me cold with pictures of the white shit that falls from the sky from northern lattitudes. The last time the white shit fell here was 1989.

Followed by Belgian pale ale followed by simple cider.
Not feeling too clever this morning, but I was mourning the dead of my inkbird.
Well, not dead, but it causes the system to trip and I can't find out why
Liking the beer, it looks good, not the sick inkbird.

Irish Extra Stout bottled New Year's Day. Grown a head followed by good lacing since I last tried it a fortnight ago. And the liquorice is far less prominent already. Just put it in the fridge for an hour and was about spot on for it. l I'll try and keep off it but I haven't had any stout in for months.

Thought I'd snap a pic of this before it kicksView attachment 24108
It's really not that bad at all.

So refreshing actually.
The starch has dropped out a bit.
Worth all the effort I rekon!
I guess you are kind of just learning how to brew all over again!
You will learn and grow and make beverages that excite you soon enough my friend!

I'm now drinking my (supposedly) infected golden strong.
Surprisingly, the off flavour has gone!
Although I can taste caramel while the grain bill was pilsner malt & sugar

The beer is very clear (to my standards).
Just strange how flavour/taste develops over time

That is where patience pays off.

But what the heck could this be?
Infected brew (clearly looked like it but doubting because of results), clesr taste of either fusel/high alcohols or something tasting really really awful
Fermented at way too high temperature, bottled in a way that promotes oxygen and very drinkable after 2-3 monthd

That = the majority of Australia's kit n kilo hombrews.

Fermented in a stinking hot garage in summer.
Bottled with no care for oxidation.
Sat for at least 3 months to begin to taste drinkable. :D!
