Too much. Had almost 2 gallons wasted not able to get into pot. Added DME sugar to compensate. Had 4.5 gallons 1.125+ gravity. Added a 1/2 gallon of water (boiled ) to get to 5.0 gallons. Starting gravity Started ferment at 66 degrees. Arreated with stone for 40 min. Good fast start. Fast bubbles 10 hours later. Nice Krausen in 24. Remember to use blow off tube next time!! Very fast yeast start foamed out the vapor lock.

My favorites are the darker, "chewier" styles that you can savor for a long while. Good cold, room temp or just sipping at whatever moment happens to be appropriate. I maintain that the best rewards come, not from another's labors, but from ones own heart. I will continue to choose my brewing contents by taste, smell and gut feeling.

Add LME to kettle prior to boil. Nottingham yeast pitched first at 60 degrees. Day two of fermentation Lalvin Bourgovin RC 212 rehydrated and pitched, raised temp to 70 degrees. Slight fermentation still going on in day 7. Oak balls soaked in scotch. Balls and soaking scotch added to secondary on 12/11/21 for 18 days. On 12/29 racked a second time into clean carboy to remove yeast sediment. Two bottles of 2017 barley wine added to help fill carboy. Oak balls removed and replaced with medium toast oak stave. Check aging progress in three months (end of March 2022). Toasted nibs and toasted coconut added to tertiary on 4/5/22. brew date: 11/27/21 secondary date: 12/11/21 tertiary date: 4/5/22 OG: 1120 OG on 12/11/21: 1036 OG on 9/5/22: 1025 ABV: 12.5%

I think honey PPG numbers in here are exaggerated. Pitched 1 pack fairly old omega gulo ale at 88 F (I was impatient) Made sure wort was somewhat aerated and will ferment open at ambient T. Aug 11 - SG is 1.013 - 7.48 %abv - coffee flavour there, dark colour, some fruity (lemon/lime/citrus/generic fruit) notes, some licorice/spice/marshmallow note as well. Alcoholic bite there. Think it needs to age? Aug 15 - SG is 1.010 - 7.88 %abv. tasty. Aug 30 - SG is 1.001 - Must be done
