Den enda ingrediensen som sticker ut är CaraAmber som jag ville tillsätta för att få en lite (mycket liten!) hint av maltsötma nånstans där i bakgrunden. EKG borde fungera fint i den här ölen med sin kryddiga, fräscha smak. Effektiviteten skruvas ner en bit pga den hyfsat stora mängden råg som används. Denna görs som en split batch (hälften med WLP001 och hälften med WY3538). Jag är förtjust i de här delade satserna, det är väldigt mycket intressant lärande utan vidare mycket merarbete. Pga risig utjäsning sista tiden (vilket lustig nog sammanfaller med när jag började använda MgSO4 i mäsken) testar jag gips den här gången. För första gången ska jag kontrollmäta mäsktemperaturen för att se om tempgivaren är off... jag har haft risig utjäsning den sista tiden.

Bubbling after 18 hours. 7/31/16 Infusion Mash the 1/2 lb of grains with 24oz water, boiled, covered and set aside for 1 hr. Boiled approx 2 1/2 gal, added DME. Boiled water and set to cool, sparged then, at re-boil added water from sparging (same amount as initial -24oz). At boil added Galaxy and started hop add schedule. pre-chilled 4 gal of spring water in freezer + 2 bags of ice for wort cool down before wort chiller. Gonna get this down quickly! ...oops. forgot to put the pot in the bath in the sink. Ended up using another bucket to surround the primary while wort chilling. COuldn't tell temperature since the air temp was in the 80's. water flow was cold. Added a third cold spring water gallon to get to 6.25 gal. Continued to cool and then pitched yeast from starter. Bubbling every 10 sec so not full steam but active. Yeast smell was good.

Should achieve 100 ppm Chloride and 100 ppm sulfate. Pitch yeast below optimal range, so 65degF. Ferment high growth phase at low end of optimal, so 67 for 4 days (low temp to limit growth and byproducts). Increase by 8deg to 75degF at day 4 for maturation phase and diacetyl rest, keep at this for 4 days (total primary ferm time=8 days). Do first dry hop while fermentation still active to scavenge oxygen, say day 5 (this will be about a 10 day dry hop depending on how long cold condition is). Slow cold condition, 2deg to 4 deg steps every 12 hours, to 15deg below fermentation temp to promote flocculation, so 52degF. Set up 2nd dry hop with whole hops in cage in keg primed with CO2. Rack beer over top and incubate 3 days at 60degF (so 3 day dry hop). Keep hops in keg, just drop temp to 4degC and carbonate as usual.
