start boil 45 min at last 10 min add second hops. cool wart and pitch yeast. Ferment for 1 week then transfer to secondary for 1-2 weeks to help clear. bottle with prim sugar 1/2 tsp per 12z. leave for 2 weeks or longer. |

Conversions:
576 ounces of cider = 4.5 gallons
72 ounces of concentrate = 6 12-ounce cans
Instructions:
1. Thaw the 6 cans of apple juice concentrate and pour into sanitized fermenter.
2. Pour in the 4.5 gallons of cider. *Unpasteurized and without preservatives is preferred, but if unavailable, yeast nutrient can be added to overcome the preservatives.*
3. Add yeast.
4. Let ferment until bubbling stops (approx. 2-3 weeks).
5. Fill a secondary bottling bucket with 6 MORE cans of thawed apple juice concentrate. This will act as your priming sugar, as well as extra flavoring. (I only added 5 cans to my batch because of a shopping error)
6. Rack fermented cider into bottling bucket, leaving the majority of sediment behind. Let sit overnight at room temperature.
7. Bottle. After several days, test a bottle to check carbonation levels. Refrigerate when ready.

Notes: Excellent winter beer. It's been such a hit, I have brewed it three years in a row, now. I tweak it a little each year, based on the type of Goldings I can find. The original recipe was for East Kent and whole. I had to use pellets this year, but this beer is not about the hops.
Toast the flaked Rye and Rolled Oats under broiler until golden brown.
Add orange zest, cracked cardamom pods and 1 cup of Cocoa powder at 5 min.
Additional 1/2 cup of Cocoa powder added to secondary.

OG 1.107, FG target is 1.002 or less. Actual FG was 0.996. ABV = 14%
Nitrogen/nutriet/K2CO3 on day0. Nutrient/Nitrogen on days 2 and 5. Stir/degass on all days 1-5 and then water in the airlock at day5. Rack after 2 weeks. Bottle after 5 weeks.
Plan is to split the batch after racking to the secondary and age one gallon (0.5 gallon w/ American Oak and 0.5 gallon w/ Hungarian Oak).
Very good, drinkable, low fusel mead at 1.5 months w/o oak and fantastic at 6+ months. For the oak experiment, I Preferred Hungarian medium oak to American medium toast oak. 14 days for both at ca. 4 cubes per half gallon. |

Notes: Steep Grains in 3.0 qts. of water at 148'F for 45 minutes. Add water to make 4.0 gallons of wort and bring to a boil. Stir in roughly half of the dried malt extract and boil for 60 minutes, adding hops at the times indicated. Add remaining malt extract and sugar for the final 15 minutes of the boil. After 15 minutes (45 min into boil), add 2 oz Fuggle Hops and Irish Moss/Whirlfloc.
Boil remaining 15 minutes.
secondary for one month to settle sediment prior to aging in oak barrel
to be aged 2+ months in used bourbon barrel.
If not aging in barrel, soak 2oz of Oak Cubes in bourbon of choice, and add to secondary - age 2+ months (6 months recommended) |
