Brewed for the 2019 Holidaily Gluten-Free Homebrew Competition
The challenge: Make a gin inspired saison without adding suspect ingredients and risking the ire of a pro brewer faced with the unlikely prospect of scaling up your recipe.
Pale and Vienna millet, buckwheat and a annoyingly small homebrewer dash of American roast millet for colour.
Herbs and spices were reserved until dry hopping to hold on to volatile flavours. I decided to skip the fresh cucumbers and citrus peel (or alcohol infusions of those ingredients) and went with the lemon-lime citrus vibe of Motueka hops for finishing.
