mash as usual
fully clean kettle (no residual hops)
bring to boil to sanitize (10-15 minutes)
cool to 100F
pitch 1 qt Goodbelly
pre-acidify to 4.5pH (4.2 pH may be better - use lactic acid or phsphoric acid)
Kettle sour to 3.3-3.4 pH
keep o2 out - Co2 purge
maintain temp around 100F until pH reached

Boil normally (add 1oz Crystal at 60, 15 g crushed indian corriander at 10 and 15g sea salt at 10

Chill and pitch 2 packets US-5
