Fermentation stopped after 7 days with 12.86% ABV. Initial taste was slightly tart with a small sweet finish of plums. Letting sit for one more week in primary to ensure complete fermentation. WIll transfer to secondary and add 2 american oak cubes (medium toast) for 2-4 weeks to give it a small oak characteristic. Then i will continue to re-rack to achieve my desired clarity. I will definitely brew this again on a larger scale.
