6/23 - added 7.88 lb Orange Blossom Honey to 1 gallon of Costco Guava Pulp and water. added 4 black tea bags steeped in 3 cups boiling water, 1.5 tsp pectic enzyme
OG - 1.119
6/24 - made two yeast starters with 6.25g Go-Ferm and Lavalin 71B (one had two older packets of yeast). Neither starter took off well, added the starter with the newest yeast, dumped the other.
7/1 - SG: 1.066
7/11 - SG 1.020
7/27 - SG 1.015 Rack to secondary, have to do it in installments as the sediment gets stirred up easily
8/18 - Took pulp from transfer in a 1/2 gallon mason jar and cold crashed. Decanted back into secondary. Then ran through a 150 micron steeping bag, cold crashed and decanted again.
8/24 - Transferred, SG 1.013, backsweetened to SG 1.023.
