2 gal water (filtered from fridge)
7 oz ginger, peeled and run through food processor (grating mode)
(7 oz after food processor, including juice)
1/4 cinnamon stick
zest from one large lemon
juice from one large lemon
brought to boil - approx 10 minutes
added 2lbs granulated sugar, stirring
turn off heat
allowed to cool on stove for 15 minutes
placed in sink of cold water for 20 minutes
ran through sieve into keg
