Notes

On 6/14/2020 I used 5.23 lbs of Dani Gilardi's honey and dissolved into ~ 2.5 gallons of 175 degrees F water.

SG = 18.6 Brix = 1.0769 g/L

I used T-58 belgian yeast to see if it will produce spicy and fruity notes.

On 6/16/2020 the gravity was 15.4 Brix = 1.053 g/L (3.2 % ABV)

On 6/19/2020 the gravity was 12.8 Brix = 1.037 g/L (5.3 % ABV). To help yeast I added 1 tablespoon of GoFerm rehydrated in boiled water on 6/19/2020.

On 7/26/2020 the gravity was 6.3 Brix = 0.996 g/L

Kegged on 8/4/2020. Final ABV = 10.7%
