Wyeast 1010 Smack pack is dated 9/11/13, only about 50B cells left. Doing a 3L starter, 11oz DME starting tonight. Update: starter overflowed and left a small puddle in the fermentation chamber. |

Get a hint of H2S in the beer, body is thin and it is quite bitter, though the bitterness should mellow out with time. Love the Saaz flavor. |

Did 4.1 oz Dextrose per 5.25 gallons. Should be 2.3 Volumes CO2. |

Fart odor is going away, first bottle about 10 days ago was bad! Overall flavor and balance is great, tart finish, hop blend is excellent, not too bitter, but not weak either. |

A few days ago tried a bottle from the other carboy, no farts, and seemed flatter and rounder than the ones from the bucket. |

Farts gone in bottles! Good beer. Tartness has dropped off a little, now on the sweet side. |
