Notes

4 Gallons water cold in kettle, add grains and bring to 154 F, cut heat and put lid on for 30 minutes.
Drain grain bag for 1 min, do not squeeze.
Add DME and LME and return to heat and bring to a boil.
Add hops as per schedule.
Chill to 90 F, add approx 1.5 gallons refrigerated water to bring temp down to 70 F to pitch yeast.
While wort is cooling, heat 6 oz water in sanitized container to 100-105 F. Sprinkle dry yeast on water and leave for 15 minutes.
Stir gently with sanitized spoon and let sit for 5 more minutes. Stir once more with sanitized spoon and pitch yeast at 70 F.
Ferment for 12-14 days then bottle and condition for 2 weeks.
