For the Wyeast 2124 - doing stirred 2.25L starter, 8.2oz DME.
For WLP840 - non-stirred starter, 3L, 11oz DME - pitch rate is only 1.0 (million cells / ml / ° P).
Put in fermentation chamber at 65F. |

The German Lager yeast (which was stirred) settled out nicely yesterday. The American Lager (not stirred but shaken) is still pretty cloudy. Turned the temp down to 60F, may turn it down again tonight. Brewing tomorrow no matter what. |

Tasted both - the German yeast gives a nice rich mouthfeel and lingering malty finish. The American yeast is dry, has a neutral almost watery finish, also has a clove like flavor, but is much clearer at this point.
There is still some airlock activity so I might have started the diacetyl rest too early :( Next time wait the full 3 weeks. |

Started cold crash. Air lock activity is completely done on German, and very slight on American (which will be kegged directly from primary). |

The green apple taste is finally fallen to a subtle note in the background in the kegged version. More tart than green apple. Clove note is gone! This is actually really quite enjoyable now and tastes great. Too bad there is not much left. |
