Notes

Grains are limited to 8lbs for a 4g boil pot.

Steep grains: 3 gallons of 170F water(will cool quickly), remove from heat, stir-in all grains, and wrap with insulation for an hour or more (stir every 15mins). Temperature will drop OK. Iodine test for conversion. Pour warm grains into the fermentor through a BIAB bag to strain the grains out. Hang the heavy bag over the fermentor to drain. Sparge with 1/2g of 170F water. Go ahead and squeeze the bag (debatable on the Web). Return that wort to the boiler (clean the fermentor & sterilize for use as a fermentor).
Bring that wort to a boil and add hops etc as usual.

Extracts go into the boil in last 10min to keep their color light and the IBUs up.

Fast Crash the boiled wort over sterilized (commercial) ICE in the fermentor to get the final size to 5 gallons and the pitching temperature close.

Second rack in into 1 liter PET bottles as shown to self carbonate. Move to 35-40F storage when bottles are "Coke Bottle hard" to stop fermentation. PET bottles can provide over 100psi safely, carbonation needs only 25PSI for a week or so. Cheers !
