Notes

First time trying honey malt in a saison. I'm using my usual saison grain bill, though with domestic pilsner for the first time. I'm using beet table sugar for the 10% sugar component, rather than wasting honey. I might use honey to carbonate the keg or bottles.

Note: IBU was supposed to be 29, but somehow the preboil value was entered wrong! It's actually 21 ibu instead. The lower bitterness might play well with the honey malt.

30Sep2025 Brew Day:

  • Mash pH est. = 5.45. pH measured = 5.22. I suspect probe drift of up to 0.15. Guessing ~5.35 actual. No pH adjustments. Replace probe asap.
  • OG = 5.75 gal @ 11.5 brix (1.046). 80% efficiency.

    25Oct2025 Kegging:
  • Did not take FG, but know it is ~1.001. Smelled good! EKG hops seem to play well with saison. Did not prime with honey.

    20Nov2025 Tasting
  • Good, but leans too heavy on malt for my taste. Will rebrew, replacing honey malt addition with victory malt.

  • pH should be similar. Increasing mash lactic acid from 1.8ml to 2.0ml
  • Changing hops to Comet and Stirling.
