Hit 148 but put in warming oven and checked at 10 min at 155. Stayed there til 40 min mark. |

Minimal hot break. Think there's enough warping that tough to get vigorous boil at this point. Last few brews have been this way.
Boiled for 70 min since volume was not coming down enough.
1.07 gravity 65% eff. Added 4 oz cane sugar to dry out and bump up alcohol on day 5.
Makes adjusted gravity about 1.075 |

Slight foam over.
Cleaned up.

Bottles 1/2 at 2.5-2.6 calculated
Bottled 1/2 at 3.3-3.5 calculated.
Dry hopped per schedule.
Cold crashed. For 36 hours. Still plenty of hops on top.
Started to bottle with hop sock onto keep hops out and stopped midway cause I saw too many bubbles.
Think that's just co2 since its submerged and can't be oxygen. That mucking with siphon yet another bottling pain. Siphon hit table multiples times.
But should be ok. |

2 weeks after bottle. Its good. No off flavors.
High carbed batch the foam is there but think the carb isn't too much maybe even needs another week to be where should be. Nice head retention and small white bubble foam. Carb is NOT too high.
Taste is good, but warming alcohol is quite present.
could definitely stand to be higher bitterness level and maybe even more hop flavor. 20-30 % or so.
Not nearly dry enough neither. That would help to mask the warming effect. That was expected with the temperature overshoot during mash. |

Fully carbed. Big 3 in head on extra carbed bottle.
Hop and malt flavor is very good. Aroma is very good. A little less warm alcohol tasting now but still there. Use this grain bill and hop combo again. Could just lower abv 1.5 and keep same hop schedule for berry good ipa. Will need to be dryer and more hoppy to support this 8.2 %. But don't feel complex to break 7% next time. Do this again and hit 7%, 150 degree mash and 70 ibu. |

Tastes less warm alcohol to me. More drinkable.
Still not great, but good. Still drink same adjustments are needed. No sugar or sugar during boil and more bittering and flavoring hops. |

Lower carbed batch is plenty carbed at this point.
Aroma is fantastic. Want it to be sweeter and more bitter. |
