I boiled vigorously for an extra 5 mins to condense wort more.
Also, whirlpool was between 180 and 170. I bumped the heat a couple times to boost it back up to 177 from 172.
Oxygenated for 2 mins at 1.5 L/min. Pitched a 6L starter, decanted to about 1 qt. So, 1 qt of yeast into fermenter. |

Racked into a keg for secondary.
Keg has a hop blocker on the draintube. Hops added loose into keg, then keg purged. Racked via racking cane from carboy into keg while keeping a small amount of CO2 running into the keg.
Tastes great, malty AF and complex with toasted marshmellow notes that go well with the bitterness. Alcohol is hot and needs some time to chill out, as expected. |

Transferred to another purged keg. Letting sit at room temp in case of hop creep. |

Got a perfect 50 at lights out 2023.
General consensus is that it’s too sweet. Adding more bitter hops in v3 |
