Brewed on 2/2/2022 using the BIAB Method.

Strike water = 8.25 gallons @ 155 degrees F.
Mash temp = 149 degrees F for 40 minutes then raised to 158 for the last 20 minutes. During that time bottom of kettle got to 180 degrees before mixing to 158 degrees F. We will see if that hurts extraction of sugars.

SG = 12.6 Brix = 1.0509 g/L
OG = 16.9 Brix = 1.069 g/L
FG = 8.0 Brix = 1.011 g/L
