Notes

Target OG: 1.055.

Brewing concentrated batch so we have 9 gallons of 1.070 wort. Adding 2.5 gallons of cold filtered water at flame out. This will drop the temp to 180F-ish and get wort out of range where DMS could be an issue. It will also minimize bitterness pick up from whirlpool hops.

Ferment at 56F for three days, then diacetyl rest on day at 65F.
