What's your next brew

If you can get a decent final gravity, life might be good. That was always my problem with extract. They always came out at 1.020 and had a weird mouthfeel.
That's why you gotta add cane sugar to dry it out
 
Brewing something like this today after work. I'll use half the DME in the beginning while steeping and then add the rest at the end of the boil with the sugar

Hi all,

I took about 5 months off from brewing because we just bought our first house, which took a lot more time to get settled into than I thought. But I've almost got my garage cleaned up and my kegerator ready to go, so I am going to make 2 beers to have on tap in April.

I have a bunch of hops that have been sitting in my freezer that I'd like to get rid of. I have about an ounce of Magnum and Chinook, and several ounces of Columbus and Simcoe. I'm thinking of maybe making a NEIPA (never made one before), and then maybe a WCIPA with the rest (assuming I don't go crazy with the dry hop) to compare the two.

I'm not sure that these hops are best for NEIPA style, but I can't imagine that they would taste bad. Let me know if you have any thoughts about what beers I should make after a bit of a hiatus and considering I'm trying to get rid of some oldish hops. I'd really like to make a wheat beer or a saison for this time of the year, but I think getting rid of these hops and buying some fresher ones is first priority. Thanks!
 
For a NEIPA Simcoe is great, haven't used Columbus in one. Magnum would be a hard no in my opinion. Chinook, a softer no, but still a no for me. Having said that, maybe Simcoe, Columbus, Chinook would be an interesting combination.
Be sure to limit, or eliminate any possibility of O2 ingress post fermentation.
 
Magnum would be a good bittering hop and the other three would make a great IPA. I entered Simcoe, Columbus, & Chinook into the Recipe Search tool on this site and it came up with a ton of American IPA recipes, including clones of Bells Hop Slam and Blind Pig.

I can see this making a nice base for fruit

Next up is the kellarbier then the Italian Pilsner
Way late on my lager run
My garage is starting to warm up
I can do 2 lagers in my chamber but only one if I use the fermzilla
