Now I'm getting the urge to do some Mexican food. Thinking smoked Carnitas! Gotta use up some of the ham I smoked last week first though. Probably ham for supper and freeze the rest. Will pull a pork shoulder out of the freezer and get it thawed and ready to smoke Wednesday. That means lots of Mexican food coming up. Carnitas Nachos, Chile Verde, Tacos, Enchilada Casserole, Tostadas, etc.
Home made Guac is always a treat, as is home made Pico de Gallo.
Last night made spinach linguine alfredo with shrimp and bacon. Ended up having to substitute the linguine so I guess it was actually spaghetti alfredo.
Chicken never happened as I forgot to defrost the thing in time.

Had Carnitas Chimichangas tonight, made from a 12+ lb. pork shoulder I smoked yesterday and then braised in orange juice with dried Ancho chilis.

Pulled pork on homemade buns tonight. Pork loin roast sous vide 15 hours at 140F, then slow cooked in a commercial sauce. Deeeelish

Hangover Soup...never heard of it, but dumplings are always delicious. What is it?
Going for a braai tonite
Link to the recipe, I use sharp cheddar for the cheese. 1/2 cup minced garlic instead of cloves, add a diced yellow onion and skip the butter.
I saved that one. It sounds great! Doing it for sure.
