FG at 1.008 a bit to dry and a bit to strong....there is a TON of yeast in suspension....hydro sample is in my fridge crashing to see what clears...think I will crash it fro a few days, then rack to the keg and throw some gelatin at while it lagers.....

I agree on the caraviennaI don't think you want Caravienna in there.
Also, if you want it a bit fruity, ferment it at 68°.
If you do, you won't need as much yeast.
But, that being said, it's your beer and what you have will work out fine.

Be careful. Kolsch isn't really known for having any Vienna but definitely brew the way you like...So that is from this
