JZ früh kolsch recipe

Care to site your sources on that? BJCP 2021 includes Vienna malt in the list of characteristic kolsch ingredients
I don't see why you couldn't use Vienna. I've seen all sorts of beer lore on that particular style...

As stated before, brew what you want.
It doesn't have to stylistically correct to be good
Amen was listening to podcast the other day on bjcp what I got out of its a style guideline put together to help in judging beer.

Sorta to me like a common language and reference point for judging beer...
 
Fruity can come from stressing yeast, underpitch or higher fermentation temperature. Or both.

Do as you think best. Ideally change only one thing at a time so you can better judge the effects.
 
It'll be beer as long as you enjoy it who cares for BJCP it's the last thing i think of when putting a recipe together :)
