Deciding on Fall beer style

@Dave Y I have used them before(100s of lbs in the bbt for stout), but the quantity needed is stupid and they are just not that great IMO. I have heard good things from other brewers about the amoretti chocolate craft puree. #beefin

on a 5 gallon batch, I added 1 pound each of chocolate and dark chocolate nibs and got a good result out of it.

Some folks go as far as adding nibs into the fermenter, but if you do that they'd better not be in there long.

Will use a bit more next time, but not a lot more.
Cranberry is something that you can overdo.
To get the amount I experimented with adding it to a commercial stout, until I got the flavor I wanted, then extrapolate to my batch size.

that is one of many reasons that i pushed off my sour brew until next week. I have 2 gals of the straight cranberry.

At your useage rate that is only 1200ml into my tank. That feels really really low to me, especially in a spiced, tangerine/cran sour. I will likely pitch 1/2 my tangerine and 2L of cranberry and ferment those out. I can always add more post fermentation!
 
There isn't any sugar to speak of in pure cranberry juice, and it is very tart/bitter. Just remember, you can always add more, but it is a real bitch taking it out. I didn't want Cranberry to take over the beer, more of a background flavor.

ya very very little sugar in cranberry. that was one of the primary reasons i had to wait, i need the simple sugars for my voss to have a fighting chance after the SP consumes most of them doing the sour dance.
