    Safale S-04 or Safale US-05 for a Mild Ale during Summer

    SO4 is my go to, seems very tolerant and produces really good English style beers. My mild is spot on to my mind, just right. US05 is, in my mind, a bit too punchy for a mild. That said, I really don't know how either would react to excessive temps.

    Brilliant. It's a tricky business that because people are not really thinking 'it's good/bad for a GF beer', they're thinking 'that's a good/bad beer', the GF bit is the brewer's problem. The art of it, I would think, is making a good beer that happens to be gluten free. Good on you buddy :)

    We have a similar product - Brausol - which is silica based and hideously expensive. Very effective though, but only works once whereas the adjunct/isinglass combo can repeat the process when the cask is moved around in delivery etc.

    I'm stumped

    I'm guessing OG and efficiency? This happens to me quite a bit. My brewing guru Chris tells me that far and away the biggest culprit in missed OG is mash temp. When I concentrate on mash temp, I get way closer to OG and to decent efficiency. Could be plenty of other things as well though...
