Notes: Brew day
1) Add 1 gal water to pot; bring to 165F.
2) Add grain bag with pilsner and oats. Mash for 60 min.
*this will lower the PH to under 6 and the 2-row will convert the oats.*
3) Remove grains add another 5 gal of water.
4) Bring temp back up to 170-180.
5) Add 6 oz of hops and wheat malt.
6) Hold temp for 20-30 min for hops to isomerize a bit and sanitize the wort; also prevents diacetyl production at this temp.
Transfer to Fermzilla
Add 2.5 oz dry hop on day 3
Remove trub and add 2.5 oz dry hops on day 6
Pressurized transfer to keg on day 10

Notes: Gallon Jugs of store bought Wasatch Mountain Spring Water.
Add 2.5 gallons in steel pot and seep Flaked Corn in mesh bag for 30 minutes at 150 degrees.
Remove the Flaked Corn from Wort, and remove pot from heat, and add all the dry malt. Stir and move pot back on burner and bring to a boil. add all the peppers and all the hops to wort.
Boil for 60 minutes. Remove peppers and cool wort, pitch yeast. |

Notes: Day 1: Boil
-Steeped Caramel at 160 F for 15 minutes.
-Boil overflowed, lost about 2-3% of liquid.
-All hops bags busted open due to using flimsy tea bags.
-User copper immersion chiller.
-Left about an inch of wort in lieu of filtering loose hops.
-Dry hopped 1 oz Citra.
-Ignored Wyeast instructions, pitch yeast at 45 minutes instead of 3 hour activation time.
-Spilled 20% of yeast solution.
-Original Gravity: 1.072
Day 14: Transfer to secondary
-Added 9 lbs of thawed ripened mango slices.
-No specific gravity reading.
Day 20:
-Accidentally dropped glass in secondary.
-Hastily chased after glass with right hand.

Notes: If you like a nice pepper beer with an extra kick (but not over powering), this might be right up your ally!
A day or two before Secondary Fermentation, Roast habanero peppers over open flame until a nice char is present or bake in oven at 400 degrees for 15-20 minutes.
Cover roasted peppers with vodka or Bourbon in a sealed container and soak for at least 24 hours. (this will sanitize the peppers).
Add peppers to carboy or secondary fermentor and rack in beer.
Add in vodka or Bourbon for extra kick if desired. It will raise the avb another .5% or so.(Otherwise save the booze for some kick-ass bloody mary's!)
Also, instead of adding peppers to the secondary fermentor. You can add the peppers directly to individual bottles during bottling day. This gives a very unique flavor as well!

sweet honey aroma, light hop note from the Sterling, pours golden and clear, good initial head that tapers off. powerful sweet honey flavor, crisp dry finish. ABV is high, this beer will sneak-up, tap your shoulder and knock your block off. |
