Notes: Add DME to water (RO) as it heats to boil. Boil for 10 min only to sanitize, add whirlfloc at boil, then add salt and coriander at 5 min before flameout. Pre-acidify wort down to ~4.5 pH by adding 4 ml 88% lactic acid, then chill to about 100° F and then add Goodbelly shot. Cover/seal kettle and hold for ~24-48 hrs. Bring to a boil to kill lacto (add any hops here if you want a few IBUs). Chill to ferm temp and pitch yeast.

To experiment with flavor additions, post fermentation - split into five 3 qt amounts, each in a one gallon glass jug. Keep one as the base Gose, but add flavor (fruit/veg/herb/etc) to other four...

INSTRUCTIONS:
1. Bring initial ingredients to 170F, then start timer at 45 minutes.
2. Simmer at 170F (max) for 45 min. Do NOT boil as it will extract pectins resulting in permanent haze.
3. Smile
4. Primary fermentation 1 week, or until it slows significantly
5. Secondary fermentation 2+ weeks to complete dryness. Excess residual sugar = bottle bombs.
6. Wash apples thoroughly, cut into thin slices. Keep stems, seeds and peels for tannin content. Rinse with StarSan solution.
7. Check that F.G. is in the range 0.996 - 1.010
8. Priming sugar, use 1/2 cup light brown sugar or honey

Notes: Add 1/2 campden tablet, crushed, to 3 gal distilled water and heat. Add sugars and bring to boil for 60 minutes. Bring 2.25 gal distilled water and 1/2 campden tablet to boil for 15 minutes, just long enough to sterilize. Cool wort and top fermentor off to 5.5 gallons with sterilized water. Pitch and ferment at 70. Add RB extract and priming sugar at bottling.

Notes: This is a Java Porter I made using a Robust Porter extract recipe. With an addition of coffee extract added during secondary fermentation.

-Cold Coffee Extract: Grind up 14 ounces of french roast coffee beans and add to 1 quart cold water. Let mixture set in refrigerator for one week, agitating daily. Using this method did not affect head retention, as you can tell from the photo.
