I had to dummy up the PPG on the pear juice and apple juice. DUH I should have done individual OG readings but ADHD kicked in. 5-6 hours it's bubbling away.

Second day, the "foam" at the top has fallen to the bottom and is bubbling away, fiercely!

By the fourth day it reached final gravity. One more day for clarity.

Bottled Day 5. Carbonation test 36 hours, seems like it might be perfect. NOT Maple Syrup but 3 ounces of Sweet Black Cherry Syrup CONCENTRATE. It's quite dry, almost like an Apple Prosecco. Actually beginning to clear in the bottle. Interesting to see what another week will do?!
