strataのベリーニュアンスを確認したくて作成したレシピ。
甘さをCarapilsで加え、ボディ・ジューシー感を。
香りのレイヤーを付けるため、3回に分けてホップ使用。


Temp 24℃
何度かサワー製造していて、ダイアセチルが気になったことがないので、途中の温度上昇はナシ。

Dry はなるべく後期に入れたい。
発酵期間を10日としたときに、前5日が酸の生成。
あと5日がアルコール生成となる為、2日ごろの設定。
比重の目安は1.010くらいでいいかと。
doの懸念から、下からやんわりガスかけながらホップ投入が理想。
