Notes

This recipe is intended to mimic a traditional lambic style.

Turbid Mash

Aged hops - The hops are debittered (aged) whole leaf hops, aged 3-5 years by the farmer.

4 hour boil - top off with water as needed to maintain target volumes and gravities.

Used finished wort to top off a solera barrel with existing yeast culture in it. Otherwise, coolship and spontaneously ferment minimum 1 year.
