Unpasteurized Wildflower Honey
2:1 ratio Honey:water for semi sweet mead
Boil 2 gallons of filtered water to sanitize it. Add 6 lbs of honey just after turning off boil at 200 degrees F.
Mix thoroughly with sanitized spoon and transfer to sanitized carboy. Let cool to 70 degrees F and then add yeast, sealing with sanitized airlock. Basically leave overnight and add yeast the next day.
