Couldn't figure out why this was so high and later determined the mash wasn't evenly stirred prior t sample taking and must have taken a pocket of exceptionally sweet wort. |

What a struggle brewing on a week night in -5 or so weather and wind. Don't know what happened with the crazy gravities. Temp corrected and double checked both refrac and hydrometer. :( Suspect I should have stirred to even out the pockets of sweetness. To top it the water qty was off and the boil off rate was reduced due to cold and wind. Had to toss some out as it wouldn't fit in the fermenter.
Let ferment in family room and after 3 days temp was 60F so raised off floor and turned up the heat. Beer now at 66F |

Nailed the taste profile! A definite weizen with banana and clove nose. Got 5th place at the OK Brewers "your version of a Dunkle" brew off at Kettle River Jan 17/17. Everyone else did Dunkle Lager sorts and wonder if this weizen was too far off the other 18 lager tastes. Would consider this recipe for a specific Dunkleweizen category. |
