Notes

When krausen begins to drop (about 2-3 days), boil 2# sucrose, 2# DME in 1/2 gallon of water for 15 minutes, cool to 60F then pitch into fermenter. The OG of the step wort should be about 1.180

Start at 69, ramp to 71 hold when adding above addition.

Beer will be fermented in carboys and then transferred to age in an Oak Chardonnay Barrel
