there was a small boil over so I lost some sugar there. I still got the OG i was looking for though.
I pitched almost 2 liters of harvested yeast from the Sellis Wit batch. It had separated out to about 1 liter of solid and 1 liter of liquid but there was still some krausen on top. I just mixed it all up and pitched the whole thing. |

bubbling was already going steadily at 9am the next morning. at 9am, on the second morning, it was still going strong. I also noticed some krausen in the tube of the airlock. |

The krausen in the airlock turned out to be a sign of very bad things to come. I came home to a good sized explosion. The airlock was filled solid with gunk, the top was blown open, the thermometer was across the room and there was crap all over the wall. I changed out the lid and the airlock base with newly sanitized ones. I started to clean up the mess on the wall but after only a couple minutes there was gunk coming out of the stem of the airlock. I fitted the larger tubing over the stem and put the other end in the Erlenmeyer and it immediately started bubbling. Less than 15 minutes later the whole tube was filled with krausen and the Erlenmeyer was cloudy. This is going to be a messy process. Hopefully the batch is not contaminated and all this hard work is not for nothing. |

I had wanted to rack this after 14 days but the airlock was still pretty active at 1 bubble every 2 minutes or so. When I sampled at day 17, it was already past the FG mark so I decided to rack.
The batch was right at 5 gallons in the fermentor after all the loss through the blow-off tube and the small explosion. After racking there was .5 gallon of trub left over.
There was a noticeable layer of scum on top but it did not look like anything out of the ordinary. I also noticed a lot of bubbles coming up from the yeast bed as I racked. I would guess these are just trapped bubbles of CO2 and not active fermentation. The beginning of the transfer was golden in color and pretty clear through the tube but cloudy in the carboy. The end was extremely cloudy and almost white in color.
The odor was definitely a spicy Belgian with noticeable alcohol. This is going to take some time to mellow. |
