Sara and Brandon's second beer collab. Sara was craving something light and crisp, and thought the Helles sounded perfect for summer. Having never brewed one I immediately started sifting through recipes and watching youtube. I wanted to give us more creative freedom with hops, Sara liked the idea of Simcoe so I thought Willamette would be a nice pairing to give it some more classic German spiciness to round out the flavor.

We will most likely also go more aggressive on the late boil hopping to give a more pronounced hop aroma/flavor. The goal is to make a very dry and crisp beer. I will most likely play into a more bitter water profile to help accentuate that. I rarely find my beers as bitter or dry as I expect, or I just have a high tolerance for dryness.
