Heated water to 165 before mashing in. Water sitting at 156 on top and 160 on bottom.
pH halfway through was 5.9. pH end of mash was 6.0. After sparge pH was 6.25.
Pre-boil volume was 3.8 gal.
Geno noted that it was down to 148 by the end, so kind of low.

This is a LOT lower than our first batch, but as far as we know it was the same recipe, same process... not sure what happened here. Factors we are guessing on:
- lower mash temp
- a little more sparge water
- age of the grains (they are about 2 months old) |

Added the candi sugar and took sample.
1 cup of water boiling. Added 222.6 grams of candi white sugar. Then cooled down to around 70 degrees in the water/ice bowl.
Poured water/syrup into the bucket. (which is bucket 1). Bucket 2 is in fermenting right now too but it has the White IPA in it.
Noticed that not all of the syrup made it in. It gets really thick at the end so we definitely lose some of that sugar. Maybe next time have a sanitized spoon to scoop out the rest. |

We think the hydrometer might be broken. Tested it in water and it looks to be about .004 above the 1.000, instead of right at it, which it should be. We'll get a new one on the next time around. This time around I adjusted the FG from 1.000 (what is measured) to 1.004. We also recalibrated pH reader. |

Used 102.41 grams of dextrose to get to a 3.1 vol carbonation. True to style based on the website we use.
Bottling Notes:
-did good with most of the bottling/transferring. Might have been some bubbles/air introduced during transfer to bottling bucket but not much.
- Capped with blue caps and used the black capper again. |
