Amber style winter seasonal beer.

  • Vienna base for bready aromatics and spice
  • Chocolate/caramel rye for color and mild roast
  • Crystal 45L (for a kick of caramel and biscuit flavor)
  • Crystal 90L (for some deeper burnt sugar and dark fruit notes)
  • Flaked barley for mouthfeel softness and head retention

    Aim for 30 IBUs. Bitter at 60, no late addition.

    Clove, cinnamon, nutmeg and pomegranate juice added after primary fermentation is finished (so, at conditioning time). Tincture the spices in vodka for a week, mix tincture and pomegranate juice, add in keg when transferring after cold crash.
