I hear you
if I need to brew something quick I knock out an APA or IPA they are fine with single infusion
 
One of these days, I might play with it. On Sunday, I want a shorter brew day so I can go out and drink someone else's beer too. I might not get to my Sunday brewery next week when my girlfriend gets back from Ireland. I want to be able to enjoy as much as I can this weekend and still brew, boring or not.
Don, I got 300 for $12.99 if I go pick it up. It is only 20 minutes up the road, so I'm picking it up with the grain tomorrow.
Now I understand what you meant by being "off" the GF is away...

Got the ingredients to do another extract pale. I swapped out the C40 for carapils for something lighter. Gonna do CTZ and Mosaic in the boil and dry hop with Mosaic and Citra

I still have my all grain ingredients for the oyster stout. I'll try to fit both in this week when I have more time
 
While I wait for my beer to finish conditioning in bottles, I’m planning my next beer. I want to make an imperial stout that’s around 11%. This will be a smaller batch at 3.5 gallons fermenting. So I was thinking of pitching a pack S04 and letting ferment for a week, and then pitching a pack of US05 to help finish fermentation. Anybody try this, thoughts?

I would pitch 2 packs of S04 at the beginning if it were me

At 3.5gal, you might not need more than one pack, and certainly not an entire second pack.
I'd like to see the target gravity first though.

I agree with @Sunfire96. Don't bother pitching a pack of US-05 a week after you pitch S-04. Assuming S-04 did its job, you would be pitching a full pack of yeast into wort with very little sugar left, with a lot of alcohol present and likely at a low-ish pH. None of that is a complete Red Flag, but it's enough to make me uneasy.
If you want to co-pitch them right from the get go, maybe. But even then, I would pitch far more S-04. Maybe a full pack of S-04 and just a smidge of US-05.

That said, I wouldn't co-pitch either. Again, as Sunfire said, I agree that the proper amount of S-04 at the beginning is the right way to go.

Got it, I just happen to have a pack of US05 on hand and I thought it might be useful. I’ll stick to 1 1/2 packs of S04. Thanks to you and @Sunfire96 for the feedback.
 
I was leaning toward brewing a Dunkel as well this weekend but, after sampling a good Vienna Lager at a local brewery I suddenly want to make a Vienna Lager! Never brewed one before. Just have to find a recipe. In post #1476 of this thread @Ozarks Mountain Brewery lists his recipe. Does anyone else have a good Vienna Lager recipe?
 
After I posted I remembered that you had one that was 100% Vienna Malt. Google research shows that the original Vienna Lagers were made that way. So I think I'll go that route. What hop(s) and yeast did you use?

34/70 and anything Noble. Saaz was really good the last time.
