What's your next brew

I've been quiet on the brewing side.
It went from extremely hot to very grey in no time. And that is not nice when you run on only solar.
Had to fiddle around and took 1 fridge totally out of commission, starlink only runs sporadically, charging of equipment only during the middle of the day.
No running of fermentation fridge.
I've not known it to be this grey for this long in the last 5 or 6 years
Grey in the desert. That is wild.
It was just for a couple of days, but it did manage to get down in the mid 30s a couple of weeks ago overnight. Thet is rather unusual this early. It has been beautiful since.
 
My latest dark lager didn't have enough roasty punch for my liking. Came out more like a weak dunkel. Gonna try again with some roasted barley in there. I'm also working on an Old Ale/Strong ale for the holidays. I'm hoping to recreate something similar to Full Sail Brewing's wassail winter seasonal ale

I use basically a Porter grain bill in my Dark Lager. In a 5 gallon batch, I have a pound of Chocolate 350 and 1/2 pound of C120. I mellow it out with 1.75lbs Munich I.

You should try the Shady Bohemian quarterly brew by @Tim Bulin. It's my go to dark lager recipe. I'm currently working on a dark rice lager. Just pilsner, minute rice, and roasted malts. I want it thin and reminiscent of coffee grounds.

That recipe looks quite good. I would have to play around with it as I would need much more grain for the BIAB, but I like the concept very much. I assume that would work with Hallertau and Saaz too.
 
My next brew will be a new recipe from me
I roasted some Pilsner malt to what I would say 20-30L so its a toasted malt
Ill use my cream ale recipe and sub that for the flaked maize
everything else stays the same
I'll call it a Golden Ale I suppose
 
Will brew my Oyster Stout next.as I have some Notty yeast coming in the mail.
It's a favorite, the creaminess of the oatmeal stout backbone makes this beer

Looks delicious. A bit malty and sweet but with nice but mildly muted hops. I’d brew that.
 
4.6% Hazy tomorrow, quick turnaround brew, hopefully still time to brew @Minbari 's sweet stout and have it pouring over the holidays.
My daughter will be home from Alberta, she would love that one!
 
Kinda dealing with an oversupply right now, I've got 1/2 batch of my Shore Leave Cali Common and a full batch of Shady Bohemian in the fridge now.

At my current rate, could probably fit another batch in there around the end of January, next up will most likely be either an ordinary bitter or an Irish red.

Maybe you need another fridge?
 
Sweet stout is in the fermenter, next brew will be Josh's 2025Q4 Dunkel, may get to that ear the end of the holidays
