Looks super tasty i find k-97 can give the beer a tart taste as well I'm sure the final PH is lower than other beers not tested this though.Paupack Cream Ale Clone:
Well...yeah, um, not exactly. There is a lot to like here and it’s a good jumping off point for the v.2 that is sure to come. The biggest fault in this beer is the K-97 yeast. I thought a Kolsch style yeast would be perfect for a Cream Ale, and maybe I was right, but not K-97. It wasn’t very cooperative right from the get go as it Krausened through the air-lock 18 hours post-pitch. Attenuated very well (81%) but got all lager-ish on me by throwing sulfur. Time and repeated “purging” of the keg vent has helped considerably, but I still get some sulfur 2-1/2 weeks after kegging. Not a lot at this point mind you. My wife says she doesn’t notice it...or maybe she’s being nice. It also refuses to clear like it should. I probably should break down and use gelatin on these type of beers, just for appearances.
Anyway, the beer is still eminently drinkable. Low bitterness with Bravo, smooth, crisp. Maybe a little bready. Nice foam, decent lacing. Just have to accept the bit of sulfur in the nose. A bit frustrating for coming close, but I’ll try this again soon with a different yeast.

Last time I cooked this beer up it was 2017! And I was in a wlp090 rutt this time round I Kvieked it and tweaked it but the base and Vienna stayed the same just no wheat addition I subbed instead to fill the grist of same weight 250g dextrine malt and 250g dark crystal malt.
Hops are mostly different Eureka Enigma do the heavy lifting in the the whirlpool followed by a high krausen bio hop of both as well as mosaic. Nothing heavy handed just a generous helping.
It's mango on the nose with a slight pine dank ness I'm not sure where that's comming from because im tasting some resinous qualities in the flavour. This is all in ballance with a good 46 IBU bit over 1:1 bu gu ratio remember this no hit 1.040 Starting gravity but tastes not at all thin but full bodied.
So at 4 ish % I'm a happy boy![]()
I'll probably take a ration of shit for this but, been working on the sprinklers, mowing, and running the weed whacker most of the day. I also managed to get my weight lifting session in too! So right about now, this hard seltzer is working perfectly for me. Super cold, lots of carbonation, not heavy, and really refreshing.View attachment 10651
