What are you doing with homebrew today?

i have been fruiting up a storm. 3 tanks got fruit/coconut today! Mango/pineapple Kolsch(6.1%), Sour Cherry/Lime sour ale(5.4%), and a Coconut black ale(6%)! All are cold crashing and i will carb/pack at least 2 of them tomorrow. maybe all 3! gotta mill in for a Rye Dunkle and clean a tank tomorrow as well! busy busy busy.

Drew a sample of the English Pale, will let it off gas then check gravity. Tastes nice, and tastes done. If gravity is where it is supposed to be I will set it to cold crash for the rest of the week.

Definitely interested to hear your thoughts on the Lutra with a Mexican-esque mash and hop bill. I’ve done a couple tries before with different yeast, but I tried the dedicated Mexican white labs yeast this time out and it was hugely better, and much more close to your archetypical Mexican lager.

Here is the finished product. 3 weeks from dough-in to glass. I fermented it at like 95 for a few days, which was about all it took for it to finish. I let is sit in the fermenter for about a week anyway, kegged it up and dosed it with some lime flavoring and let it sit in the fridge for about two weeks.

As you can see, it turned out nice and clear with a foamy head and light straw color. Honestly, I have no issues with this beer except for the lime flavoring I used, which tasted artificial, and gave it more of a key lime flavor, so that's what I called it at the party where I served the whole keg. People said they really liked it, and I didn't taste any off flavors, but the lime flavoring masked a lot, so I'm unsure exactly how clean it was--still, it tasted quite good to me.

I'm going to do another quick lager with it in the next couple of months, so we'll see how it does with a Pilsner or Rice Lager or something. I recommend trying it, especially if you are in a pinch. I needed to make a light, refreshing beer in 3 weeks, and it definitely did the trick.
