I picked up 10 lbs of free mystery grain at my
Local brew store. I have 1 lb of light dme, 1/2 lb caramel 40l, 1 lb of Caramunich type 1, 1/2 lactose and 1 lb of Demerara sugar.
Anyone have a suggestion about what to make?

And, I kind of like the idea of the English yeast and hops.
If I got a real wild hair up my ass, I might try a lager yeast on it. I like darker lagers these days, and that might be interesting with a mystery bag.
there’s definitely rye in there, some light base malt and some more modified, darker malt.

Let’s go Farmhouse ale or Saison.
Let’s go with the pound of DME and .5# of the caramunich.
For yeast, I really like the French Saison strain, but probably any Belgian yeast.
For hops, I’d go for about 30-35 IBUs of low to medium AA hops. MAX of 40 with this volume of grain.
There is a list of grains, and the name Roger, on the right side of the bag. So, it's probably the grist for a specific recipe, and not just random grain. I'd probably go with some moderate bittering hops and a neutral yeast and see what happens.
You could also go something like 2 row and enough of this for like 10% of the grain bill. then you will probably have something quite drinkable and whatever this is will add character but won’t make the beer too sweet, roasty, or whatever is in the bag?
