    Sourdough with bacon, basil, garlic, tomatillo & cheese
    No pineapple

    I got no tomatoes yet and the tomatillo's are gping wild, so just gave it a go
    And it works :p

    Well, I finally tried out the Ooni at work yesterday.
    It definitely takes some getting used to, but after a few pies, I feel like I was dialing it in.
    The pies are very different from what I can do in my home oven and are done in ~90 seconds.
    Less is definitely more as far as toppings go or it just won't cook them.
    For the crust, I dropped to 63% hydration and removed sugar and any oil and went with a 2 day cold ferment after my poolish.
    Dough balls went down to 230 grams.
    The pizza came out nice with a spotty char on the crust and a super soft and tender crumb!
    No pictures yet, but I'll get some next time I use it.
