Help use up my 2026 Cascade harvest

I just did the 3rd of what looks like 4 harvests this year and the rest that come in will get frozen for next year.

I have 10.6 ounces of dried & frozen Cascade and
7.9 ounces of fresh Cascade I need to use pretty quick.

My objective is to create a drinkable beer, which will be the canvas for the hops. I've never had enough homegrown hops for a full batch of beer before, so who knows what will happen. I'd like the malt to support the hops and maybe even help. Ditto the yeast.

I have Lutra, Voss & French Saison yeasts that should finish up pretty quickly, and I don't have the time for a lager (vacation coming up).
I could even pull some malt and sub in my 3 pounds of horsemint honey.

My thinking is Kveik fermented farmhouse ale. I've guessed that the AA's are about 4 and that's probably being generous. I was first thinking NEIPA, no 60m hop.
Now I think I'll probably have to break up some of those 10 ounces and make a boiling addition, maybe 2 - 2.5 ounces and whirlpool the rest.

Anyone have any thoughts on using up these hops?

Use a known bittering hop for either 60 or 20 min (or both) and then your fresh hops at either 5 mins or whirlpool and also as a dry hop. During the summer I use Lutra kveik exclusively. I ferment under pressure and add the dry hops when I pitch the yeast so I can pressure ferment the entire fermentation cycle
 
I’m a little nervous about dry hopping with either the fresh or dried and frozen hops, but I could be convinced…

Lutra it is then.
But I still want to stick with all home grown hops. I may do a late boil add and leave them in for the whirlpool as well
 
I updated the notes from yesterday's brew. No real surprises.

I did do my first mash hops. I put an ounce of my processed/dried hops in with the mash and mash out.
2 ounces for 60m
1 ounce for 20m

6 ounces processed hops
+
8 ounces fresh hops

whirlpool x 30 minutes at 175.
All Cascade.

I got a light citrus aroma when I switched out the blow off tube, so fingers x'd.

how bad can it be

I've done it many times in my harvest ale
its always a one off because the hops are different from year to year
if they smell good use them
