I just did the 3rd of what looks like 4 harvests this year and the rest that come in will get frozen for next year.
I have 10.6 ounces of dried & frozen Cascade and
7.9 ounces of fresh Cascade I need to use pretty quick.
My objective is to create a drinkable beer, which will be the canvas for the hops. I've never had enough homegrown hops for a full batch of beer before, so who knows what will happen. I'd like the malt to support the hops and maybe even help. Ditto the yeast.
I have Lutra, Voss & French Saison yeasts that should finish up pretty quickly, and I don't have the time for a lager (vacation coming up).
I could even pull some malt and sub in my 3 pounds of horsemint honey.

My thinking is Kveik fermented farmhouse ale. I've guessed that the AA's are about 4 and that's probably being generous. I was first thinking NEIPA, no 60m hop.
Now I think I'll probably have to break up some of those 10 ounces and make a boiling addition, maybe 2 - 2.5 ounces and whirlpool the rest.
Anyone have any thoughts on using up these hops?
