Exactly if I had the Equipment I would split this batch and do that. I have used the same recipe for a Pale ale using us-05 and Kveik Voss and enjoyed both. I felt the Voss had a “fruitier” taste. But if didn’t brew at the same time and with my small batches I could have other variables.
 
One last question and I’ll leave you all alone for the day. Should I just do a 60 minute hop addition?

That's how I do it. Helles is complete grain forward, hops are there to provide bitterness and a subtle woody flavor.
 
That’s what I was thinking but I’m quite green to all of this.
