Deciding on Fall beer style

This stream has meandered out of it's banks many times over. :)

Starting with pondering a good style for fall season that's actually still full-on summer weather, we've touched on Hockey, reminisced about the early days of craft beer, taken a deep dive on which and how many flavors are appropriate for a sour and ended up nerding out on glycol, temp control and hot-weather brewing facilities.

Definitely an impressive degree of drift, even for this crowd. :D
Also to be fair the sour beer topic was on topic for this thread imo! the rest was def wandering.

That Kolsch sounds interesting. One of the places I go dry hopped their normal Kolsch, and that is damn good.
 
I'm not going too far the rest of the year. I'm going to spend a few days at the beach near St Pete next week, but I'm probably not going any further than that.
 
The tangerine/blackberry sounds good as does the tangerine/cranberry those all make good kettle sours

its really really good. its my favorite so far of the stupid fruited kolsches that i have made. The blueberry is well balanced and fairly light. there is still a kolsch beer flavor in the finish.

@Brew Cat going for a mulled wine holiday flavor profile. subtle spices with the cran orange.

...as for the drift vector, I'd expect nothing less from this forum. :D Keeps things interesting. The thread is showing signs of outlasting the keg of beer that I brewed as a result of the initial discussion. :D :D

This is where i am at for right now. Based off my oyster stout recipe.

Gonna add raspberry and chocolate craft puree(4.5lbs mid-fermentation, 4.5 post), vanilla, and a small amount of salt. shooting for 6.4-6.6% might add some dextrose to up the abv if needed. shooting for a 151 mash temp.

I can see nutmeg and a bit maybe clove but cinnamon has ruined every beer I've used it in.
Actually speaking of spice my wife has made me a spice cake today with cream cheese frosting for my Bday. I'll pare it with my ESB

I've actually enjoyed a chocolate raspberry stout. I've always worried about using chocolate https://byo.com/articles/brewing-with-chocolate-tips-from-the-pros/
Not a fan of lactose in beer though

Have you considered mashing in some cacao nibs?

I soak nibs in rum for a couple weeks before making my chocolate cranberry stout, I use 100% pure cranberry juice (a little goes a long way). It comes in at about 7.4%ABV
 
@Dave Y I have used them before(100s of lbs in the bbt for stout), but the quantity needed is stupid and they are just not that great IMO. I have heard good things from other brewers about the amoretti chocolate craft puree. #beefin

@Brew Cat I have never used cinnamon in a beer before hence why i made a tincture out of it. I made a chocolate raspberry stout when we first opened up and it was pretty good. trying out the chocolate and using amoretti raspberry.

@Craigerrr The tincture is split between 2 1.5L nalgenes. 6 oz toasted cinnamon, 2 oz Grains of paradise, 4 oz of pumpkin spice mix(ginger, cinnamon, cloves, and nutmeg). 2800ml of shitty vodka. gonna leave it warm for a few weeks. hopefully i have more then enough for my needs.

bought 2 gals of straight cranberry juice(no sugar, no nothin') hopefully that is enough i will toss atleast half a gallon with the yeast and yeast nutrient once the sour is sour enough. i may also toss half of my tangerine craft puree at the same time.

How much cranberry juice did you use in what volume???

You found 100% Cranberry? That is awesome. All the garbage I see around here is mixed with Apple Juice, so check your bottles.

yup there are a bunch of options available. its the 1 liter bottles of 100% juice not from concentrate. nothing added. Store brand four about $6/liter. bought 8 liters of it and spent about half of what i would have from amoretti. I am not sure if it will add much color since its just 2gals into about 76, but it is very very dark red.
 
The way Ive done it is Make my Berliner Weiss and secondary on fresh cranberries

I cant really do that with my gear. if i transfer to another tank, i wont get my full kegs. I would also be super sketched out using fresh fruit. If anything i would do aseptic fruit puree.

ya with sour pitch i can adjust the ph by changing my dextrose addition. I can also toss the yeast/nutrient/o2/fruit combo sooner and let the voss out-compete the lacto. I am gonna brew the base beer tomorrow so that I have time before the weekend to test the ph and toss the voss.

welp i WAS gonna brew, i wont have the fruit until next week. they were out of stock on one of my items and wont ship till tomorrow.... :(

Ahh, the expensive stuff:) At the normal store, all the $4-5 100% juice bottles are all mixed with Apple Juice, and you don't notice until you look at the fine print. I'm glad you found what you needed.

yup. generally when i can get 100% juice without added sugars i will go that route since the amoretti is $133 plus shipping for 1 gal. I have used the no sugar added cherry and OJ before and they work fairly well. I ordered the Tangerine craft puree because i think the sweetness of the tangerines is better then just straight OJ. Surprisingly the Dark cherry which was basically black liquid did not effect the final color of the beer. even after 8 L

Well i looked back at my fruit/flavorings notebook and 8L of dark cherry plus 1 gal of amoretti is what i used for a sour a while ago. I might need to get more cranberry juice, but i feel like cranberry is gonna be a much more potent flavor...i also have some cranberry flavoring coming so... we shall see.
