I used to bottle a gallon of certain beers and keg the rest when I was on my porter kick
Now I'm doing mostly lagers wheats and German ales that get kegged a drank
I may start doing some small batch keepers
I brew a Barleywine every year and like to see how each “vintage” ages, but the oldest ones I have are only from 2021.
If you ever pop one of those open, I’d like to know where they stand. Hard to tell when a cellar-worthy homebrew might fall off the cliff, but there has to be a time when they hit peak drinkability. And how do you know when you’re in that window?
Well it's still has a little carbonation so it's not infected or sour
Still fairly sweet but the spices have faded
And the molasses is prevalent
I added a little nutmeg and tasted and then ginger and tasted
the molasses went away but it tasted better with the nutmeg
I threw a clove in last but to much bite
I remember fresh it was to spicy and now there's no spice
Probably best at about a year
I wouldn't have aged these beers so long they just got shoved to the back
They are not dumpers but I would make changes
