If they're designed to fool us, they've done a great job of fooling me and about 25,000 cow-orkers, about 1/3 of whom also use an AI agent regularly to multiple times / day...

    you're at ~12% corn, my KY Common has almost 17% and you can definitely tell there's corn in it. I've seen/had other KYC with 3# in a 5-ish gallon batch and they tasted similar, but I was a bit nervous about that much corn in the mash bill. For ref., my 16.8% is 2# of corn in a 6.25 gallon...

    How much pressure is too much pressure?

    ZOINKS! The answer is, possibly. What temp were you fermenting at? I've been able to get lagers to finish at 15 psi for the entire length of fermentation ( and that was too much. Also a Vienna lager ). Pressure does inhibit -I suppose would be the best descriptor, normal fermentation speed...
