Ok have a wheat with T58 planned. I have dried some lemons and orange also some mandarin. Probably set up a series and repitch each to a different fruit version.
My plan is start with the lemon in the first. Maybe some at flameout then more in the whirlpool. I'm not looking for flavor as much as aroma. Not sure about hops. Any feedback?
 
Maybe I won't use the T58 the more I think about it. Need to look at what I have in stock
 
I think T58 would work for what you planned.

So more like a wit, with citrus flavors. Ok.

Some kinds of hops deliver not-grapefruit citrus. Lemon drop is one. Also adding fruit could overwhelm with the citrus. Maybe lemondrop but no lemons, just orange and mandarins.

Or just bitter with hops, use fruit for the aromas.

Imperial A24 dry hop yeast won’t interfere with the hop aroma much. There are many such neutral yeasts however. Pick one, as opposed to a yeast that offers significant flavors. T58 has flavors, like banana, typical for Hefeweitzens, of which this is not.

Don’t forget rice hulls, or you may end up with a stuck mash.

Yeah I will probably go with some Chico I thought I could get away with the T58 fermented Cold. Not sure why I even have T58. I use Bavarian ale yeast for Hefs. @Zambi has the right idea in a triple but I don't drink those. As far as hops no flavor or aroma just a little bittering charge.

Going for more like Sam Summer with a bit more Lemon aroma, that's why I'm thinking whirlpool

Interesting
I don't have lime or GoP or Chico. It's either the T58 or MJ Hazy IPA yeast
I'm leaning towards the lemon and mandarin and the IPA yeast.. I've heard the T58 doesn't throw many esters fermented Cold but not sure I want to chance it
